Simple Yogurt Cake

This simple yogurt cake is one of the healthiest and easiest cakes you can prepare in your kitchen. Some of the ingredients used to make this simple cake are probably lying somewhere in your kitchen.

Yogurt cake — as the name states — is loaded with yogurt which is nutritious, low on calories, great for gut and heart health, and rich in calcium which is great for bone health.

Once the cake is ready, do not refrigerate as this dries out the cake, instead, store it in an airtight container at room temperature for up to 4 days.

You can also wrap the cake slices in a cling film and store it in an airtight container — then freeze for up to a month.

Ingredients:

  • 2 cups (250gr) all-purpose flour
  • 1 cup (250gr) plain yogurt, at room temperature
  • ½ cup (100gr) white sugar
  • 2 tsp baking powder
  • ½ cup (80gr) vegetable oil
  • 2 eggs, at room temperature
  • ½ Tsp Vanilla essence
  • A pinch of salt
  • 1 Lemon, zest

Directions

  1. Preheat your oven to 180C° (350F°/).
  2. Grease a 5-inch loaf pan with butter or cooking spray or line the pan with parchment paper. (For better results I always grease and use parchment paper as well.)
  3. In a bowl, whisk together the flour, baking powder, and a pinch of salt and set aside.
  4. In a separate bowl, mix the eggs and sugar, then add in the oil, lemon zest, vanilla essence and mix again. Add the yogurt and mix it into a smooth consistency.
  5. Add in the flour mixture to the wet batter and mix until just combined, do not over mix.
  6. Transfer the batter into the prepared loaf pan and smooth the top.
  7. Place your rack in the middle position, then transfer the batter into the oven and bake for about 35-40 minutes, until a toothpick inserted into the center of the cake comes out clean.
  8. When the cake is ready, remove it from the oven, allow it to cool for 10 minutes then transfer to a wire rack to cool for an hour.
