Moist Mixed Fruit Cake

This amazing fruit cake is so moist, perfectly flavored and has a rich and velvety texture. This recipe is also an incredibly easy and speedy version of making a traditional fruit cake as you don’t have to soak the dried fruits for hours on end.

In this fruit cake recipe, the dried fruits are boiled in liquid which will make the raisins and dried fruits soft and plumpy and thus ensures the cake turns out amazingly moist.

The cake tastes terrific and still keeps for ages and it’s just as delicious made with or without alcohol. In this recipe, we are going without the alcohol to make it more shareable.

Fruit cakes tastes amazing freshly cooked, but tastes even better the next day as the flavor and texture of cake improves a lot with that time.

Moist Mixed Fruit Cake

Ingredients:

  • 1 ¾ Plain flour, (loosely packed)
  • 600g Dried mixed fruit
  • ½ cup dark/light brown sugar
  • 3 tbsp Mollasses (you can use brown sugar)
  • 1 cup or 2 sticks Butter
  • 3 Eggs
  • 1 tsp Baking powder
  • Zest of 1 Lemon
  • Zest of 1Orange
  • 1 tsp Mixed spice (Nutmeg, cloves, cardamom, dry ginger)
  • 1 tsp Cinnamon powder
  • ¾ cup Water
  • 1 tsp Vanilla Extract (optional)
  • ½ tsp Salt

Dried fruits and nuts used:

  • 175 g Raisins
  • 200 g Dried Cranberries
  • 100 g Dates
  • 200 g Prunes
  • 75 g Chopped Pecans

Directions:

  1. Pre-heat oven to 160°C (320 F) .
  2. Lightly grease a 7 inch or 8 inch cake tin with some butter/oil and line with 2 sheets of grease-proof papers.
  3. In a medium saucepan, combine the butter, the raisins, cranberries, brown sugar, molasses and water and bring to a boil, then simmer over moderately high heat for about 3-4 minutes, stirring occasionally.
  4. Remove from the heat and allow to cool off for about 45 minutes.
  5. Add in lightly beaten eggs and vanilla extract(optional) and the nuts into the saucepan with the cooled off boiled dried fruits.
  6. In a different bowl, sift together the flour, baking powder, mixed spices, zest of orange, zest of lemon and salt then add the mixture into the saucepan as well.
  7. Mix everything together, just until everything is well incorporated.
  8. Transfer the batter into the prepared pan and bake in the center of the oven at 160°C for about 75-90 minutes or until a toothpick inserted in the center of the cake comes out clean.
  9. Allow the cake to sit in the baking pan for a few minutes before transferring to cooling rack to cool completely.
  10. Serve and enjoy.

    Hi. This may sound like a dumb question, but the Mixed spices, is it 1 tsp of each spice?

    1 tsp Mixed spice (Nutmeg, cloves, cardamom, dry ginger)

      It’s 1 tsp of combined spices
