Remember to use a toothpick to check for doneness. Make sure there are some crumbs stuck to the toothpick. You can check after 25 minutes of baking.


  • 1 cup (200g/ 7Oz) granulated sugar
  • 1 cup (200g/ 7Oz) brown sugar, lightly packed
  • 3 eggs room temperature
  • 3/4 cup (75g/ 2.6Oz) cocoa powder
  • 1 cup (120g/ 4.2Oz) flour
  • 1 teaspoon (6g/ 0.2Oz) salt
  • 1.5 cup (260g/ 9.2Oz) dark chocolate chips
  • 1 cup (225g/ 7.9Oz) melted butter, unsalted
  • 1 tbsp coffee 15ml
  • 1 tbsp vanilla extract 15ml

Fudgy Chocolate Brownies


  1. Preheat the oven to 350 degrees Fahrenheit and prep an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine melted butter, eggs, vanilla extract, and coffee then mix together well.
  3. Add the white and brown sugars to the mixture and whisk together well.
  4. Sift cocoa powder, flour, and salt into the bowl and mix until just combined then toss in chocolate chips or chunks and fold into the batter.
  5. Add batter to pan and smooth to the edges. You can add more chocolate chips to the top before baking if desired.
  6. Bake for about 25-30 minutes or until the center is just set.
